Baked Bean Cups
Makes 4 cups
415g can salt reduced baked beans
150g shortcut bacon, trimmed of fat, diced
1⁄4 cup reduced fat grated cheese
2 slices mountain bread
Freshly ground black pepper
Preheat oven to 180°C. Heat a small frying pan that has been sprayed with oil. Add bacon and cook for a couple of minutes. Drain excess fluid from baked beans. Combine beans and bacon. Trim mountain bread pieces so that they will push into 4 cups of a muffin tray and overhang slightly. Divide bean and bacon mixture between muffin cups and bake for 10 minutes. Sprinkle with cheese to serve.
