Choc Banana Protein Muffins

Serves 12

1½ cups wholemeal flour
2 teaspoons baking soda
½ teaspoon cinnamon
1 tablespoon coconut sugar
¼ cup melted coconut oil
3 mashed bananas
1 teaspoon vanilla essence
½ cup milk of choice
4 tablespoons whey protein isolate powder (available in our online store)
¼ cup roughly chopped dark chocolate

Preheat your oven to 180°C and line a baking tray with baking paper or muffin moulds. In a large mixing bowl, mix together the flour, baking soda, cinnamon and coconut sugar. In a separate bowl, combine the coconut oil, mashed bananas, vanilla and milk. Now add the wet mixture to the dry mixture and gently fold until well combined. Lastly, fold in the dark chocolate pieces. Spoon the batter into the muffin tray, filling each hole ¾ of the way. Place in the oven and bake for 18 – 22 minutes or until golden on top and a skewer comes out clean. Let the muffins cool for 5 – 10 minutes, then enjoy!
