Classic Tuna Salad
Makes 1½ cups
185g can of tuna in spring water, drained
2 stalks celery, strings removed and finely diced
1 gherkin, finely diced
2 teaspoons wholegrain mustard
1 tablespoon dill, chopped
2 tablespoons mayonnaise
Place all ingredients in a bowl and mix until well combined. Store in the fridge for up to three days.
– Wrap in a lettuce leaf
– Top grainy crackers
– Fill a wrap
– Serve with vegetable sticks.
Nutrition information per ½ cup serve: kilojoules 570, calories 136, protein 15g, fat 6g, saturated fat 1g, carbohydrate 5g, fibre 0.5g.
