Mexican Salad Cups

Makes 4 small serves
400g can four bean mix, drained and rinsed
400g sweet corn kernels
1 tomato, diced
1 small green capsicum, diced
1⁄2 avocado, diced
Handful of fresh mint, shredded
Handful of fresh coriander, shredded
4 lettuce leaf cups
Juice of one lime
Fresh chilli to taste
Add beans, corn, salad vegetables, avocado and herbs to a bowl and stir to combine. Divide bean mixture between lettuce cups. Squeeze over fresh lime and top with chilli to taste
