Slow Roasted Tomatoes
The perfect, prepare ahead side dish that is oh so good!
I use these super sweet tomatoes as a delicious addition to salads, as a cracker topper with ricotta or cottage cheese or even stirred through some pasta.
You don’t need to stress about exact cooking times or measures in this ‘recipe’ – it is really a ‘feel your way’ type dish.
Simply follow these steps:
- Slice tomatoes in half and place snuggly in a baking tray – just use as many as will fit in your tray.
- Drizzle with olive oil and balsamic vinegar.
- Season with plenty of cracked pepper.
Place in the oven at 150° and bake for 1½ – 2 hours until soft and sweet.
