Slow Roasted Tomatoes

The perfect, prepare ahead side dish that is oh so good!

I use these super sweet tomatoes as a delicious addition to salads, as a cracker topper with ricotta or cottage cheese or even stirred through some pasta.

You don’t need to stress about exact cooking times or measures in this ‘recipe’ – it is really a ‘feel your way’ type dish.

Simply follow these steps:

  1. Slice tomatoes in half and place snuggly in a baking tray – just use as many as will fit in your tray.
  2. Drizzle with olive oil and balsamic vinegar.
  3. Season with plenty of cracked pepper.

Place in the oven at 150° and bake for 1½ – 2 hours until soft and sweet.
