These Banana Pikelets are a quick, easy, weight loss surgery friendly breakfast that the whole family will love.
Banana Pikelets
Makes 4 small serves (4 mini pikelets per serve)
1 banana, mashed
4 eggs, whisked
1 teaspoon vanilla essence
Cinnamon to taste
2 tablespoons wholemeal self-raising flour
2 tablespoons good quality protein powder
2 teaspoons olive oil
400g Greek yoghurt
1 apple, grated
Combine the first six ingredients together. Heat olive oil in a frying pan. Add small spoons of the mixture into the pan and cook until bubbles appear. Flip and cook the other side. Layer the pikelets with apple and yoghurt to form a mini stack.
Nutrition information (per serve): kilojoules 1010, calories 241, protein 16g, fat 8.5g, saturated fat 3.5g, carbohydrate 22.5g, fibre 4.5g.
