One of our favourite stand-by meals is the Thai Inspired Chicken Meatballs from our Single Serves recipe book. We cook it in batches and freeze for those "I've had a long day" or "simply can't be bothered" nights.
Thai Inspired Chicken Meatballs
Makes 20 small meatballs or 10 small patties
500g chicken breast mince
1 teaspoon red curry paste (or to taste)
1/3 cup sweet chilli sauce
1 egg, lightly beaten
1/3 cup low-fat cottage cheese
½ cup multigrain breadcrumbs
1 tablespoon salt reduced soy sauce
¼ cup coriander leaves, roughly chopped
Drizzle of olive oil for cooking
Pre heat oven at 180°C. Place all ingredients in a bowl and mix well. Roll into walnut sized balls. Place on a non-stick or oiled oven tray and bake for 15 minutes or until cooked through and golden.
Note: The mixture is quite wet so use baking paper or a silicon mat on your cooking tray to prevent the meatballs sticking.
Nutrition information (per two meatballs or one patty): kilojoules 540, calories 128, protein 12g, fat 5.5g, saturated fat 2g, carbohydrate 8g, fibre 0.5g.
